Ingredients:

1 Fresh Carp (Approximately 1kg)

1 Stick of Spring Onion

2-3 Slices of Fresh Ginger

1 Tablespoon of Salt

1 Red Chili Pepper

5 Garlic Cloves

1/3 Cup of Soy Sauce

1/3 Cup of Vinegar

2 Tablespoons of Cooking Wine

1 Teaspoon of Sugar

1 Tablespoon of Vegetable Oil

Instructions:

1. Rinse the fresh carp under clean running water and remove its scales and internal organs.

2. Dry off excess water using a kitchen towel, then cut several gashes into the skin of the carp to allow the seasonings to penetrate.

3. Cut the spring onion into sections and the ginger into slices.

4. Crush the garlic cloves and red chili pepper.

5. In a small bowl, mix together the soy sauce, vinegar, cooking wine, sugar and vegetable oil.

6. Spread the ginger and spring onion into a shallow dish, then place the carp onto the bed of ginger and onion.

7. Pour the mixed seasoning sauce over the carp, and add the crushed garlic cloves and red chili pepper.

8. Leave the dish to marinate in the fridge. 2-4 hours is ideal.

9. Preheat your oven to 200°C. Remove the marinated carp from the fridge, and transfer it to a baking dish.

10. Bake the carp in the oven for 20-25 minutes, or until the flesh is cooked through and the skin is crispy.

11. Serve immediately, garnished with fresh cilantro, green onions, and sesame seeds.
